Maybe you've come across this recipe (or something similar) for low carb pancakes, but this is so easy so here we go!
1. Mash up a medium sized banana in a bowl with a fork.
2. Break a medium sized egg into the banana mixture and beat together with the fork, like this:
3. In order to hold the mixture together, i've found from experience that a tablespoon of self raising flour helps. mix in thoroughly and you're ready to cook on a preheated griddle/pan with some spray oil to coat it.
From this mix you should get about four small pancakes. Let them cook for about 2 minutes on each side until golden brown.
And depending on how healthy you want to be, serve with fruit toppings, whole fruit, melted butter and maple syrup , dust with icing sugar, or my favourite, chocolate hazelnut spread! DELICIOUS!
